Grilling wings from raw can be a challenge because as the fat from the skin renders the grill flares up and if you are not keeping an eye on the wings they can catch fire.
This method will give you much crisper skin and prevent grill flare ups giving you much better flavor.
After the wings are grilled you'll want to toss them in a delicious sauce but what flavor you might ask???
If you have not had Bang Bang Sauce then you are missing out. The spicy creamy sauce is normally served on shrimp but it's fantastic on grilled chicken wings as well.
These Bang Bang Grilled Chicken Wings will be a huge hit every time you make them we promise!!
Making Bang Bang Sauce
Bang Bang Sauce is very simple to make but does have a few ingredients you might not have on hand.
You can purchase these ingredients online or at your local asian market. Some chain grocery stores that have a well stocked international isle should also have these ingredients.
Bang Bang Sauce Recipe:
¼ cup Mayonnaise
¾ cup Sweet Thai Chili Sauce
2 tbsp Sriracha
Juice of 1 Lime
1 tbsp Sesame Oil
Instructions:
Whisk together all ingredients until smooth. You can store this in the fridge for about 1 month.
Best Grilled Wings Ever!
There is a reason wings taste so good and have a crispy texture at most restaurants. They are cooking them twice.
Restaurants will pre cook the wings just long enough to be fully cooked then immediately chill them and store until you order them.
This is done to save time but it also makes the skin extra crispy when cooked a second time.
The same process can be done at home to recreate that restaurant quality wing everyone loves.
How to Pre Cook Wings
Start by patting the wings dry and lightly seasoning the wings. You can use salt and pepper or use your favorite dry rub.
Bake the wings on a sheet pan for about 35-45 minutes until the wings reach 160 degrees F.
Immediately transfer the wings to a shallow container and refrigerate. You can store these in the fridge for up to 3 days before cooking a second time.
Cooking the Wings Twice
When you cook the wings a second time you are going to use high heat. You can grill them, or use an air fryer or broil in the oven.
This time cook the wings to about 190 degrees F. or when the wings are golden and crispy.
The outside will be crispy and delicious and the meat will be tender easily pulling away from the bone with each bite.
This method is great because you can pull the wings right out of the fridge and grill them up in about 10-15 minutes.
You can season the wings however you like or toss in you favorite sauce like the Bang Bang Sauce I used for this recipe.
